Comments: Ice machine parts (internal) and ice scoop holder both had black spots due to moisture. Machine will be emptied and clean out during Christmas break, but was cleaned with sanitizer cloth for the moment. Do not wait until end of semester to clean machine. In between, clean it with a sanitized cloth to avoid buildup. Can opener and meat slicer found in dry storage also contained buildup and were sent to be washed, rinsed and sanitized. Keep all food contact surfaces free of buildup.

Comments: A box of food was observed on freezer floor. Do not store food containers on floor. Must be at least 6 inches off the floor. A closed plastic container of chips was observed on cart in the kitchen in a high traffic area. This was sitting across from hand washing sink and prep area. Floors were wet. Keep the food away from high traffic areas, especially if the floors are wet or raw meats are being handled nearby. This will decrease chances of lid being kicked off by accident and contaminating by splash from floor or raw meat. Cart was greater than 6 inches so food was simply moved. Corrected on site. Single-service items in storage room were not inverted. Invert to protect from pests, dust and contamination. Corrected on site. A light shield is missing on lights between ice machine and ware washing equipment. Always shield lights to avoid glass in food if bulb were to break.

Comments: Observed dented cans stored with cans to be used. All dented or damaged cans must be separated/segregated to be returned to the distributor. Observed visible soiling on cooler and pass-thru handles and gaskets. All non-food contact surfaces must be cleaned as needed to prevent visible soiling and maintain good repair.
