Comments: Observed visible soiling inside microwave and on blade of can opener. All food contact and non-food contact surfaces must be cleaned as needed to prevent visible soiling. Sour cream in reach-in cooler expired. Expired foods must be discarded after expiration date. No food being prepared during inspection.

Comments: No paper towels were available at either two hand sinks (kitchen and grill). Paper towels must be available at all times for proper hand drying. Do not dry hands and aprons or clothes. Corrected on site. Cheese found out of temperature in home-style fridge and discarded. A covered container of beans made last night was found out of temperature in home-style fridge due improper cooling. Discarded. Also, two containers of beans were found cooling on storage rack. They had just been made and were still at 138 degrees but when asked regarding cooling procedures, they were unable to answer correctly. Multiple boxes of chicken (grilled) were observed without time control. Chicken is packed in to-go boxes and stored out on counter in kitchen. The time was not recorded on the chicken at grill outside. Heat was no longer being applied to that chicken. Time must be recorded for all chicken in boxes that is cooked and removed from heat or cold. It is not an option to skip recording time even if you are sure the food will go fast. Next time all chicken in boxes or on grill will be discarded if time not recorded and if it is less than 135 degrees. Dumpster lid was open and even when closed, a gap formed because it could not be fully closed due to the large amount of trash. Have trash removed more often or remove some properly on your own when necessary. Doors must fully close to avoid rodents and animals from entering and leaving. Hood must be serviced. Tag says it was serviced in 2011 and owner said it was done again this year. Will return at the end of the week to check service tag.
