Comments: Provolone cheese in bottom prep cooler was out of temperature. It had been out for a few minutes. Cheese was placed in reach-in freezer to bring temperature into compliance. Ready to eat, potentially hazardous foods must be maintained at 41 degrees or lower. Bagged roast beef in reach-in cooler was found to be out of temperature due to inappropriate cooling. Roast beef was discarded, had been cooling greater than 24 hours. Ready to eat, potentially hazardous food must be cooled from 135 degrees to 70 degrees in two hours and 70 degrees to 41 degrees or less in the following four hours. Wiping cloth was found out of sanitizer bucket sitting on sink wall. Cloth was placed in sanitizer bucket. Cloths must be kept in sanitizer buckets with appropriate strength when not in use.

Comments: Employee was observed using a cloth from a bucket with weak sanitizer to wipe food prep surface, cutting board and knife. When sanitizing food contact surface, make sure that the sanitizer level is appropriate. QAC: bucket, 200 ppm; sink 100 ppm. Multiple items were observed that were not cooled properly. It was mostly barbecue meat that was discarded. Date marking indicated food was being stored for eight days. Food may be used for seven days with day one being the prep day. Multiple dented cans were observed in dry storage. They were segregated from the good ones. Corrected on-site. Sanitizer levels were too weak in all buckets. Comment sheet from last inspection was not in the establishment. Wet stacking was observed. Wet cups were stacked. Allow utensils and dishes to air dry. Torn gasket was observed in door of bottom prep cooler. Grocery bags were used to store food sandwich meats. Microwave had visible food debris. Clean microwave.
