Restaurant report card — Whitfield County


— Whitfield County Environmental Health conducts inspections of restaurants. The inspectors may require a re-inspection. Restaurants are required by law to post their most recent inspection permit.

The Daily Citizen lists areas where the establishments are out of compliance with the regulations. Recent restaurant scores for all six counties within the North Georgia Health District are available at www.nghd.org.

Comments: Certified Food Safety Manager (CFSM) not available due to expiration of certificate. Test will be taken this week. At least one CFSM must be on staff at all times. Contact Environmental Health Department when test results arrive. Lack of compliance may result in suspension of permit until CFSM is available. Four concrete blocks were observed under the three-compartment sink and being used as support. Concrete block is not acceptable in food prep areas because it is not smooth or easy to clean due to pores. Remove concrete blocks and if necessary replace with smooth, easy to clean material. Three-compartment sink requires air gap to protect the sink from possible contamination from wastewater. Light bulbs in fixture above prep cooler need light shields to protect food from shattered glass. Another light fixture beside prep cooler needs light shield.



Burger Den-Varnell, 160 Highway 2

Comments: An employee was observed putting a coffee pot in the mop sink and inserting the water/detergent pipe into pot to wash it. She was asked to wash, rinse and sanitize coffee pot before use. Do not use mop sink to wash food contact surfaces to avoid contamination. Ice machine is rough and rusted. Replace pieces to smooth surfaces. Corrected on site. Employee observed wearing wristwatch. Jewelry must not be worn on hands, except for a solid band ring (no stones). Multiple wiping cloths were observed on countertops. Place cloths in bucket when not in use.



Quinton Memorial Rehab Center, 1115 Burleyson Road

Potentially hazardous food must be date marked for a minimum of seven days, day one being the day the food was prepared or original container was opened. Educational material provided. Date changed from 6/20-6/27 to 6/20-6/26. Scoop handle was found in contact with ice. Do not allow handles to come in direct contact with food. Utensil removed. A light shield or light bulb in walk-in cooler was missing. Place shields on all lights in food prep/storage areas to avoid contamination from shattered glass.

Comments: A wet cloth was observed in hand washing sink at a drink station. Multiple items were also observed around sink. Do not use hand washing sink for anything other than hand wash. Raw shrimp and scallops were observed out of temperature in walk-in. Those meats are by cooler doors that open to face the grill, which increases temperature of meats. Keep as few amounts of food as possible to avoid affecting proper temperature. Use time if temperature cannot be controlled, mark foods with the time they fall out of temperature and add four hours. Food may be used for a maximum of four hours if it is out of temperature. Discard food after four hours if any remains. Record all times. Bagged pasta appears to be cooling improperly due to exposure to room temperature in the process of bagging. Out of temperature pasta discarded. Educational material provided. Corrected on site.

Comments: Two large containers of rice were observed in walk-in cooler. Both were made yesterday. One did not cool properly and was discarded. Cool food properly. Date mark all ready-to-eat food with the date it was prepared or that the original container was opened. Previous inspection sheet was not posted. Have inspection sheet posted at all times in public, clear view.

Comments: Employee observed wearing gloves while rinsing wiping cloth and then grabbing bag of bread. Employee was stopped before grabbing slice and was asked to wash hands and changed gloves. Hands must be washed before changing gloves. Gloves must be changed when switching tasks, but especially when contamination to food is high when handling food. Two containers of cheese and one of meat were observed not covered while stored in bottom prep cooler. Cover all stored food. Sanitizer bucket by prep table does not have a detectable level of sanitizer. Sanitizer must be available to clean cloths. Change out bucket and measure 100 ppm of chlorine. A wiping cloth was observed sitting on prep table and in contact with lettuce. Wiping cloth was placed in bucket and lettuce discarded. Do not allow cloth contact with food to avoid contamination. Corrected on site. Multiple wiping cloths were observed wet and out of the sanitizer bucket. Place cloths in sanitizer bucket when not in use. Corrected on site.



Powell’s Country Kitchen, 116 W. King St.

Luigi’s Pizza Italian Restaurant, 3957 Cleveland Highway, Suite C

Comments: Employee was observed placing pickles on plate with bare hands. Ready-to-eat food must never be touched with bare hands. Clean utensils or gloves may be used to touch foods. Remember to always wash hands before putting on a clean pair of gloves. Pickles were discarded. Corrected on site. Multiple dishes on prep coolers were observed to contain considerable buildup and one employee did not know when they had been last washed. Those dishes are used to scoop out cheese and other ready-to-eat ingredients. Dishes used for potentially hazardous foods must be washed, rinsed and sanitized at least every four hours to avoid contaminating clean food with residues and bacteria possibly found on used dishes. Dishes were replaced. Both can openers need to be washed, rinsed and sanitized. Both were observed to have considerable buildup and debris. A piece of equipment on meat slicer has obvious rust spots. Repair or replace piece with rust. Food contact surfaces must be smooth, easy to clean and in good repair. Soft drink fountain was observed to have what appeared to be mold spots. Remove pieces to wash, rinse and sanitize them. Do so frequently. Cardboard is observed throughout the kitchen for different purposes. Remove all cardboard from kitchen, as it’s an absorbent material that does not allow easy cleaning. Microwave must be repaired or replaced due to chipped paint and exposed metals. Fan was observed to have dust buildup facing the prep table. Maintain fan clean to avoid blowing contaminants onto food in prep cooler. Remove all buildup on fryers, pizza oven and equipment doors and handles. Replace torn gaskets. Floors, walls and ceilings need to be cleaned to remove buildup.



Shoney’s, 1302 W. Walnut Ave.
