Restaurant report card — Whitfield County

The Daily Citizen

— Whitfield County Environmental Health conducts inspections of restaurants every three months. The inspectors may require a re-inspection. Restaurants are required by law to post their most recent inspection permit.

The Daily Citizen lists areas where the establishments are out of compliance with the regulations.

The grill cook stated he had forgot to put it back in the cooler. If the meat, for ease of prep, needs to be close to the grill, then place in an ice bath. The beef and chicken was discarded at time of inspection. Employee jackets on shelf with avocados. Employee items must be stored separately from food and food service equipment.

Comments: Improper reheating for hot holding. Cooled chicken and taco meat in holding cabinet at 78 degrees and 79 degrees respectively. Other items in the cabinet at 136 degrees. When reheating for hot holding, the potentially hazardous food must get to 165 degrees and a unit holding 136 degrees is not capable. The Person In Charge stated that it had been in for one hour. The food was pulled and placed in an oven to rapidly reheat to 165 degrees and higher. Shelving in the large, three-door cooler is rusted and a mold-like substance was observed in the unit. Clean the refrigerator to remove rust and mold. Clean the hood. Floor not in good repair. Replace floor.

The seals on drawer cooler under grill must be replaced. The fan vents in the walk-in cooler should be cleaned to remove dust and what appears to be mold. Repair the ceiling in the dry storage area that has collapsed. Note: the three-compartment sink is used for food prep — meat sink, vegetable sink. The facility was permitted this way so no points were deducted.

The Person In Charge stated that the ham and meatballs had been out of the cooler during lunch. Both were discarded. Use an ice bath to maintain potentially hazardous foods at 41 degrees or lower if it must be out of the cooler for an extended period of time. Improper cooling. Meatballs at 67 degrees and chicken at 79 degrees. The meatballs had been out on counter for one and a half hours so were rapidly reheated to 165 degrees to then begin the cooling process over 135 degrees to 70 degrees to 41 degrees within four hours. The chicken was discarded. Prepared potentially hazardous food not date marked. All prepared potentially hazardous food held more than 24 hours must be date marked. Clean floors under equipment. Note: need original Serv-Safe Certificate.
