Restaurant report card — Whitfield County

The Daily Citizen

— Whitfield County Environmental Health conducts inspections of restaurants. The inspectors may require a re-inspection. Restaurants are required by law to post their most recent inspection permit.

The Daily Citizen lists areas where the establishments are out of compliance with the regulations. Recent restaurant scores for all six counties within the North Georgia Health District are available at www.nghd.org.

Comments: Slicer has not been washed, rinsed and sanitized and the four-hour mark has passed. All equipment used with potentially hazardous food must be properly cleaned and sanitized every four hours. Improper cooling methods were observed. Baked potatoes were stored in tightly closed containers. They have another 30 minutes at this moment and are now cooling properly. Container lids were removed to release heat. Do not cover food that is actively cooling. Cooling must be occur at specific intervals. 135 degrees to 71 degrees (two hours), 71 degrees to 41 degrees (four hours). Corrected on site. Employee observed wearing gloves to sweep and the other did not wash hands between glove change. Wash hands between glove change and only wear them to handle ready-to-eat foods.



Ridgewood Nursing

Comments: Multiple containers of cooked meat did not have date mark. One container was past its use-by date by one day. All ready-to-eat food that is potentially hazardous must be date marked with a use-by date of seven days maximum, with day one being day food was cooked/opened. Food employee was observed wearing watch. Jewelry is not allowed on wrists or fingers except  a solid band ring. Gloves were being worn for cleaning and handling spatulas. Only wear gloves when touching ready-to-eat foods. Hole in wall and separation is allowing air in via a direct opening to outside. Repair hole and seat separation so that there is no gap that may allow dust or pests into kitchen from outside. Water heater may not have capacity. Will follow up to see if repair or replacement is needed.

Comments: Chlorine was not detected when cloth bucket was tested. Must maintain sanitizer level at 100 ppm chlorine in cloth buckets. Test level regularly. Two containers (ham, bologna), were past use-by dates. Check dates daily and discard food at the end of its seventh day. Day one is day food was made or opened.

Comments: Hand soap and paper towels are not available in restroom. Must supply all hand sinks with hand soap and paper towels. Chemical bottle was observed with nozzle at level with a utensil, making it easy to accidentally contaminate utensil. Keep all chemicals away from food contact surfaces. Fix leaking toilet.

Seal gap between hand sink and ware washing sink. Place light bulbs on bulbs in dry storage room.

Cooked noodles are rinsed with cold water in vegetable sink to aid in cooling. Water or ice must not come in direct contact with food. Keep handles out of food. Employee observed towel drying plates. Plates must be air dried.
