Comments: Handwashing sink by drink station had dripped chocolate and a spoon in sink. Handwashing sinks must not be used for dumping or rinsing anything. Sink must only be used for handwashing. Chlorine concentrations in cloth buckets were low. Clean, sanitized dishes were stored in plastic container that holds water, debris and a dead fly. Chlorine must remain at 100 ppm for cloth buckets. Properly air dry dishes before storing and do not store clean utensils in soiled containers/surfaces. Ice scoop handle was observed in contact with ice. Do not allow handle to touch ice/food. Food debris was observed throughout freezer floor. Remove debris. Original ServSafe will expire next month. The other two posted are copies. Bring original certificate and post before original (already posted) expires.

    The Atlanta Campaign began during the first two weeks of May 1864 in and around Dalton. Union Maj. Gen. William T. Sherman’s strategy was to target two of his armies, about 80,000 men, against Confederate Gen. Joseph E. Johnston’s Army of Tennessee at Dalton. Then, while Johnston’s attention was diverted by these forces, he would secretly send his third army, about 25,000 troops under Maj. Gen. James B. McPherson, in a flanking movement to the southwest through Snake Creek Gap. Sherman’s goal was to break Johnston’s railroad supply line some 15 miles south at Resaca and trap Johnston’s Confederates in Dalton.
