Restaurant report card — Whitfield County


— Whitfield County Environmental Health conducts inspections of restaurants. The inspectors may require a re-inspection. Restaurants are required by law to post their most recent inspection permit. The Daily Citizen lists areas where the establishments are out of compliance with the regulations.

Comments: Bags of breaded chicken and prepared meat were observed without date marking. Mark all ready to eat, potentially hazardous food with use-by date when stored. Food should be marked for use by the seventh day including day food was prepared. One person was observed not washing their hands between glove change. All compartments of sink were being used to hold dirty dishes and not maintained clean. Unoccupy sinks used for rinsing and sanitizing clean sinks if they become dirty. Clean before re-using sinks. Dirty gaskets and cooler handles.

Comments: Two personal drinks were observed on counters. They were in plastic containers with lid and straw but containers were not single-service. All personal drinks must be in single-service cup with lid and straw. Bathroom door and back door leading to Dumpster are not closing. There is also exposed wood on back door. All doors to bathroom and exits must be self-closing and fully closing. Paint exposed wood.



Antonio’s Mexican Restaurant, 3590 S. Dixie Highway

Wiping cloth was observed out of bucket lying on prep table. Choking poster must be displayed in public view in dine-in area. No poster available. Kitchen employee was observed using a wiping cloth, then immediately handling buns and bacon. Gloves must be removed, hands washed and new pair of gloves used before handling ready to eat food before changing tasks.

Comments: Slaw in ice bath and multiple ready to eat, potentially hazardous foods were observed above 41 degrees. Potentially hazardous foods in cold hold must be maintained at 41 degrees or below. Lower temperature in walk-in cooler, it read 40 degrees and does not seem to be maintaining food at appropriate temperature. A wet wiping cloth was observed out of bucket, sitting on counter. Sanitizer bucket and sanitizer sink did not contain any chlorine. Check sanitizer levels when filling bucket and sink to ensure proper levels.

Comments: Hand sink missing in bakery room. Each food handling area is required to have a hand wash sink. Wiping cloth bucket on the floor. Keep bucket up off floor. Replace torn gaskets. Repair all plumbing/pipe leaks. Repair walk-in freezer floor. Fill hole in walk-in storage. Replace ceiling tiles.



Chili’s Grill and Bar, 881 Holiday Inn Drive

Comments: Grilled chicken and raw chicken were observed uncovered in trays in walk-in. Foods on prep table/line were found out of cold holding temperature. These foods had also been out for more than four hours. Foods were potentially hazardous foods and ready to eat; discarded. Avoid stacking foods (cheese) too high. Close lid on prep table to block heat from stoves. Party trays and other single-service utensils were not inverted. Invert food contact surfaces, such as plates and cups, to avoid contamination. Cooks were observed not changing gloves between orders and tasks. Wash hands and use gloves after switching tasks or after returning to food handling/prep area. Door on Dumpster and surrounding area had significant food/trash buildup. Keep Dumpster and area clean to avoid attracting pests and harboring bacteria. Floors were dirty and wet. Sweep floors when kitchen activity dies down. Dry floors.



Gill’s Grill, 1511 Abutment Road

Comments: Kitchen staff was observed handling wiping cloth, then leaving kitchen and re-entering kitchen and handling and touching the inside of a container in which she placed freshly baked rolls. She did not wash her hands at any moment. She also held the batter mix spoon near scoop of spoon where it could come in contact with batter. Hands must always be washed when re-entering kitchen between tasks. Staff observed washing pot, but not sanitizing it. She placed it out to dry. All food contact utensils must be washed, rinsed and sanitized. Wet wiping cloths were left out on counter after use. Sanitizer levels in bucket too high. Keep wiping cloths in bucket when not in hand. When using QAC, keep bucket level at 200 ppm. Handles were seen in agriculture products as kitchen cups were used as scoops. Keep handles out of food. Handle-less cups not allowed as scoops; replace. Using handles prevents contamination of products. Forks were stored with food contact surface up. Keep utensils face down so that handle is grabbed.



Las Margaritas Mexican Bar and Grill, 816 Walnut Square Blvd., Suite 28B

Comments: No Certified Safety Food Manager. Every establishment is required to have a CSFM with certificate posted. Employee not washing hands before gloves. Hands must be washed before donning gloves. Employee with drink in a bottle. Drinks must be in single-service cup with lid and straw. Beef at 97 degrees after five hours cooling. Chicken at 72 degrees. Cool to 70 degrees in two hours, 41 degrees in total of six hours. Corrected on-site. Use proper cooling methods: shallow pans, coldest part of unit, ice bath, stir, etc. Submerge cloths in sanitizer when not in hand. Post hand washing signs at hand sinks. Store clean utensils with handles up. Invert single-service items. Employees shall change gloves when changing tasks. Need chlorine test strips. Hot water ran out. Came back after 30 minutes. Corrected on-site. Shield lights.

Employee restroom did not have access to hot water due to broken handle, no paper towels, multiple leaks (toilet and sink). Provide paper towels and hot water. Brown eggs in walk-in cooler from unapproved source. Washed broccoli was placed back in dirty box. Oyster bag observed hanging over cut oranges in walk-in. Box of onions sitting on top of bag of oysters. Prepared, processed, ready to eat foods did not have dates. Must be properly dated. Multiple bent cans among non-damaged cans. Must segregate damaged cans. Wiping cloths observed laying out of bucket. Maintain cloths in bucket with appropriate sanitizer levels. Wet stacking was observed. Air dry utensils. Gloves were stored in employee pocket. He was observed pulling them out and re-using them. Shelves and walls observed with residue and food buildup. Walls need cleaning and floors, shelves as well.

Store food away from possible contamination. Wet stacking was observed. Knife was observed stored in wooden knife holder. Allow utensils to air dry. Store all utensils in clean, easy to clean container. Employee bathroom needs self-closing doors and lid on trash can. Repair floor in freezer and walk-in cooler to maintain them flat and avoid trapping food underneath.
