Restaurant report card — Whitfield County


— Whitfield County Environmental Health conducts inspections of restaurants. The inspectors may require a re-inspection. Restaurants are required by law to post their most recent inspection permit.

The Daily Citizen lists areas where the establishments are out of compliance with the regulations. Recent restaurant scores for all six counties within the North Georgia Health District are available at www.nghd.org.

Non-food contact surfaces must be free of accumulation.



Zaxby’s of Dalton, 2710 Airport Road

Comments: The can opener and dicer were observed to contain buildup of food debris and what appeared to be mold and some rusted areas. Food contact equipment must be maintained clean, free of buildup and rust to avoid food contamination when using equipment. Wet stacking metal containers was observed. Allow all washed equipment to fully air dry before stacking. Microwaves have rust spots and peeling plastic on the inside. Repair or replace equipment to create a smooth, easy-to-clean surface and avoid peeling pieces from falling into food.

Comments: Sanitizer levels in buckets were too low when tested. Levels coming directly from water/sanitizer nozzle were also low. Levels will be closely monitored and a special piece will be shipped overnight. In case that QAC sanitizer cannot be kept at proper level, use bleach and get test strips for chlorine: 100 ppm for sanitizer buckets, 50 ppm for sanitizer sink. Corrected on site. Tijuana’s Mexican Restaurant, 2311 Chattanooga Road

Comments: Four metal containers were observed in the walk-in freezer. The beans cooling had been doing for 2.5 hours. All containers were discarded. The beans were in shallow containers and uncovered and still did not reach temperature. Put less product in containers and use ice bath as well to improve cooling time/temperature. Los Pablos, 2204 Chattanooga Road

Comments: A fish fillet was observed on top of a stack of raw ground beef in a container in a walk-in. The fish was removed and discarded. Raw meats must be separated based on cooking temperatures to avoid cross contamination. Educational material provided. Microwave was observed to have some dangerous/peeling plastic on the internal side of door. Repair or replace so that it becomes a smooth, easy-to-clean surface. Multiple pieces of wood throughout the kitchen was observed, used mostly as support. Remove wood or paint it with multiple layers until wood is non-absorbent, smooth and easily cleanable.

Comments: Employee observed frequently wiping gloved hands on apron and not washing hands and changing gloves between tasks. Hands must be washed before putting on gloves. Change gloves regularly between change in tasks and when switching from working with raw products to ready-to-eat products. Employee was asked to remove gloves and wash and reglove before handling ready-to-eat food. Hamburgers and eggs are made to order, but there is no indication of that on the menu and there is no consumer advisory. Place a reminder on food cooked to order and consumer advisory. Tomatoes (sliced), cheese and ham in bottom prep cooler were all out of temperature. Most likely due to busy breakfast and proximity to the grill. Ready-to-eat, potentially hazardous foods must be maintained in cold holding at 41 degrees or lower or use time as a control; four hour maximum.
