Comments: The can opener and dicer were observed to contain buildup of food debris and what appeared to be mold and some rusted areas. Food contact equipment must be maintained clean, free of buildup and rust to avoid food contamination when using equipment. Wet stacking metal containers was observed. Allow all washed equipment to fully air dry before stacking. Microwaves have rust spots and peeling plastic on the inside. Repair or replace equipment to create a smooth, easy-to-clean surface and avoid peeling pieces from falling into food.

Comments: Sanitizer levels in buckets were too low when tested. Levels coming directly from water/sanitizer nozzle were also low. Levels will be closely monitored and a special piece will be shipped overnight. In case that QAC sanitizer cannot be kept at proper level, use bleach and get test strips for chlorine: 100 ppm for sanitizer buckets, 50 ppm for sanitizer sink. Corrected on site. Numerous flies found in dry storage area.

Comments: Potato salad at 46.8 degrees, sliced cheese at 48.4 degrees, sliced turkey at 45.5 degrees, roast beef at 45.2 degrees. Hold potentially hazardous food cold at 41 degrees or lower. ServSafe certificate must be posted for public view.

Tijuana’s Mexican Restaurant, 2311 Chattanooga Road

Comments: Four metal containers were observed in the walk-in freezer. The beans cooling had been doing for 2.5 hours. All containers were discarded. The beans were in shallow containers and uncovered and still did not reach temperature. Put less product in containers and use ice bath as well to improve cooling time/temperature. Educational material provided.
